Banana Bread

Happy Banana Bread Day!

To celebrate, our Chef Stephen Hayes has shared his very own banana bread recipe for you to enjoy baking with the family or the perfect treat to enjoy with a nice cup of tea or coffee.

Ingredients

  • 4 Over Ripe Banana’s (400g Roughly)

  • 400g Sugar

  • 3 Large Eggs

  • 250g Plain Flour

  • 1 tsp Salt

  • 1 tsp Baking Powder

  • 3/4 tsp Bread Soda

  • 1/2 tsp Ground Nutmeg

  • 1/2 tsp Cinnamon Powder

  • 2 tbsp Chocolate Chips

  • 2 tbsp Raisins or Sultanas

  • 2 tbsp Roughly Chopped Pecans or Walnuts

  • 200g Melted Butter



Method

  • Pre-heat the oven to 175 degrees.

  • Mash the bananas and mix the sugar and eggs.

  • Add the flour, salt, baking powder, bread soda, nutmeg, cinnamon and mix well.

  • Add the chocolate, raisins and nuts and mix through.

  • Add the butter and mix.

  • The consistency should be quite wet, almost like a batter.

  • Divide between two lined or greased bread tins and bake for approx 1hr.

  • Allow cool and enjoy!
